Ingredients:
For the Beef Marinade:
- 1 lb (450g) beef sirloin or flank steak (cut into 1-inch cubes)
- 3 tbsp olive oil
- 3 tbsp soy sauce
- 2 tbsp lemon juice or red wine vinegar
- 2 garlic cloves (minced)
- 1 tbsp ground cumin
- 1 tbsp ground paprika
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/2 tsp ground black pepper
- 1/2 tsp ground cinnamon
- 1/2 tsp cayenne pepper (optional, for heat)
- Salt to taste
For the Vegetables:
- 1 large red bell pepper (cut into chunks)
- 1 large green bell pepper (cut into chunks)
- 1 large onion (cut into chunks)
- 1 zucchini (sliced)
- 1 cup cherry tomatoes (optional)
For Garnish (optional):
- Fresh parsley or cilantro (chopped)
- Lemon wedges
Instructions:
1. Marinate the Beef:
- In a large bowl, combine olive oil, soy sauce, lemon juice, minced garlic, cumin, paprika, coriander, turmeric, black pepper, cinnamon, and cayenne pepper (if using).
- Add the beef cubes and toss to coat well.
- Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
2. Prepare the Vegetables:
- While the beef is marinating, prepare the vegetables. Thread the vegetables onto skewers, alternating between bell peppers, onion, zucchini, and cherry tomatoes (if using). You can also marinate the vegetables in a little olive oil, salt, and pepper if desired.
3. Preheat the Grill or Oven:
- Preheat your grill to medium-high heat. If using an oven, preheat to 400°F (200°C) and line a baking sheet with aluminum foil.
4. Assemble the Kebabs:
- Thread the marinated beef onto skewers, alternating with the prepared vegetables. If using wooden skewers, soak them in water for at least 30 minutes before threading to prevent burning.
5. Grill the Kebabs:
- Place the kebabs on the grill and cook for 8-12 minutes, turning occasionally, until the beef is cooked to your desired level of doneness and the vegetables are tender and slightly charred.
- If using the oven, place the kebabs on the prepared baking sheet and roast for 15-20 minutes, turning once halfway through.
6. Serve:
- Garnish with chopped fresh parsley or cilantro and lemon wedges if desired.
- Serve the kebabs hot, with a side of rice, couscous, or pita bread.
